Description
Thick cauliflower steaks roasted with Parmesan cheese until tender and golden brown.

- 1 large head of cauliflower
- 3 tablespoons olive oil
- 1/2 cup grated Parmesan cheese
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat your oven to 400°F (200°C).
- Line a baking sheet with parchment paper.
- Trim the leaves and stem from the cauliflower, leaving the core intact.
- Carefully slice the cauliflower head vertically into 1-inch thick ‘steaks’. You should get 2-3 steaks from the center. The outer florets will crumble, which is fine.
- In a small bowl, whisk together the olive oil, salt, and pepper.
- Brush both sides of the cauliflower steaks with the olive oil mixture.
- Place the steaks on the prepared baking sheet.
- Sprinkle the grated Parmesan cheese evenly over the top of each steak.
- Roast for 20-25 minutes, or until the cauliflower is tender and the Parmesan is golden and bubbly.
- Carefully flip the steaks and roast for another 5-10 minutes, until the other side is also golden.
- Serve hot.
Notes
- You can add other seasonings like garlic powder or paprika to the olive oil mixture.
- The outer florets can be roasted alongside the steaks and seasoned similarly.
