Description
Prepare this delicious blueberry French toast casserole the night before for an easy breakfast treat.

- 1 loaf (13 to 16 ounces) French bread, challah, or brioche
- 8 large eggs
- 2 cups whole milk
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 2 cups fresh or frozen blueberries
Instructions
- Slice the bread into 1-inch thick slices. Arrange the slices in a single layer in a buttered 9×13 inch baking dish.
- In a large bowl, whisk together the eggs, milk, sugar, vanilla, cinnamon, nutmeg, and salt until well combined.
- Pour the egg mixture evenly over the bread slices.
- Sprinkle the blueberries over the top of the bread.
- Cover the dish tightly with plastic wrap and refrigerate for at least 4 hours, or preferably overnight.
- Preheat oven to 375°F (190°C).
- Remove the casserole from the refrigerator and let it sit at room temperature for about 15 minutes.
- Bake for 45 to 55 minutes, or until golden brown and puffed up.
- Let stand for 5 minutes before serving. Serve warm with maple syrup, if desired.
Notes
- You can use other berries or fruits instead of blueberries.
- Add a streusel topping for extra crunch.
- This casserole can be baked immediately after assembling, but soaking overnight yields a better texture.
