  • 1 pound fettuccine pasta
  • 1 (15 ounce) can pumpkin puree (not pumpkin pie filling)
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons Cajun seasoning
  • 1 tablespoon butter
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Combine the fettuccine, pumpkin puree, heavy cream, chicken broth, Cajun seasoning, salt, and pepper in a large pot or Dutch oven.
  2. Bring the mixture to a boil over medium-high heat, stirring frequently to prevent sticking.
  3. Once boiling, reduce the heat to medium-low, cover, and simmer for 12 to 15 minutes, or until the pasta is cooked through and most of the liquid is absorbed. Stir occasionally during simmering.
  4. Remove the pot from the heat. Stir in the butter and Parmesan cheese until the sauce is smooth and creamy.
  5. Serve immediately.
