Ingredients

- 1 pound spicy Italian sausage
- 1 large onion, chopped
- 4 cloves garlic, minced
- 6 cups chicken broth
- 3 large russet potatoes, peeled and sliced
- 1 cup heavy cream
- 1 bunch kale, stems removed and chopped
- Salt to taste
- Black pepper to taste
Instructions
- In a large pot, brown the Italian sausage over medium heat. Drain excess grease.
- Add the chopped onion and cook until softened, about 5 minutes.
- Stir in the minced garlic and cook for 1 minute until fragrant.
- Pour in the chicken broth and add the sliced potatoes. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15-20 minutes.
- Stir in the heavy cream and chopped kale. Cook until kale is wilted, about 5 minutes.
- Season with salt and pepper to taste.
- Serve hot.
Notes
- You can substitute mild Italian sausage for spicy.
- For a thicker soup, mash some of the potatoes against the side of the pot.
- Leftovers can be stored in the refrigerator for up to 3 days.
