Description

A classic, creamy Southern banana pudding recipe with vanilla wafers and meringue topping.


Ingredients

  • 6 large eggs, separated
  • 1 1/2 cups granulated sugar, divided
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 3 cups whole milk
  • 1 tablespoon vanilla extract
  • 1/2 cup butter, cubed
  • 5 ripe bananas, sliced
  • 1 box (11 ounces) vanilla wafer cookies

Instructions

  1. Preheat your oven to 350 degrees F.
  2. Make the custard: In a medium saucepan, whisk together 6 egg yolks, 1 cup of the sugar, flour, and salt. Gradually whisk in the milk until smooth.
  3. Cook the custard over medium heat, stirring constantly, until the mixture thickens enough to coat the back of a spoon, about 8 to 10 minutes. Do not boil.
  4. Remove the custard from the heat. Stir in the vanilla extract and butter until the butter melts. Set aside to cool slightly.
  5. Assemble the pudding: Arrange a single layer of vanilla wafers in the bottom of a 9×13 inch baking dish. Top the wafers with a layer of sliced bananas. Pour about one-third of the cooled custard over the bananas and wafers. Repeat the layers twice more, ending with custard.
  6. Make the meringue: In a clean bowl, beat the 6 egg whites until soft peaks form. Gradually add the remaining 1/2 cup of sugar, beating until stiff, glossy peaks form.
  7. Spread the meringue evenly over the top of the pudding, sealing it to the edges of the dish.
  8. Bake for 12 to 15 minutes, or until the meringue is lightly golden brown.
  9. Cool completely before serving.

Notes

  • You can bake this recipe in individual ramekins for single servings.
  • For a quicker topping, use whipped cream instead of meringue.
  • Use slightly firm bananas for slicing so they hold their shape better.
