Ingredients

  • 1 cup milk (or plant-based alternative)
  • 1 medium carrot, grated
  • 1 egg
  • 1 tbsp honey or maple syrup
  • 1/2 tsp cinnamon
  • Pinch of salt
  • 1 tsp oil or butter for cooking

Instructions

  1. Blend oats into flour using a blender or food processor.
  2. Add milk, grated carrot, egg, honey, cinnamon, and salt. Blend until smooth.
  3. Let the batter rest for 10 minutes.
  4. Heat a non-stick pan over medium heat and lightly grease with oil or butter.
  5. Pour 1/4 cup of batter into the pan, swirling to spread thinly.
  6. Cook for 2 minutes until edges lift, then flip and cook for another minute.
  7. Repeat with remaining batter.
  8. Serve warm with your favorite toppings.
