Description

A rich and creamy cake with a nutty flavor, inspired by a cappuccino.

Ingredients

Scale
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup milk
  • 1/4 cup strong brewed coffee, cooled
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup chopped walnuts or pecans
  • For the Frosting:
  • 1 cup unsalted butter, softened
  • 3 cups powdered sugar
  • 1/4 cup strong brewed coffee, cooled
  • 1 teaspoon vanilla extract
  • 1/4 cup chopped walnuts or pecans

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a large bowl, cream together the softened butter and sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the milk, cooled coffee, and vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the chopped nuts.
  7. Pour the batter into the prepared cake pan and spread evenly.
  8. Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
  9. Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
  10. While the cake cools, prepare the frosting. In a large bowl, beat the softened butter until creamy.
  11. Gradually add the powdered sugar, alternating with the cooled coffee, until smooth and spreadable. Stir in the vanilla extract.
  12. Spread the frosting evenly over the cooled cake.
  13. Sprinkle the remaining chopped nuts over the frosting.

Notes

  • Ensure coffee is completely cooled before adding to batter and frosting.
  • For a stronger coffee flavor, use espresso instead of brewed coffee.
  • You can toast the nuts before adding them for a deeper flavor.
