Instructions

  1. Line a muffin tin with liners.
  2. In a medium bowl, combine rolled oats, peanut butter, honey, melted coconut oil, vanilla extract, and salt.
  3. Mix until well combined.
  4. Spoon the mixture into the muffin liners, filling each about two-thirds full.
  5. If using, press chocolate chips, shredded coconut, or sprinkles into the tops of the cups.
  6. Place the muffin tin in the freezer for at least 30 minutes, or until firm.
  7. Once firm, transfer the cups to an airtight container and store in the freezer.

Notes

  • For a firmer texture, add an extra tablespoon of coconut oil.
