Enjoy easy no-bake peanut butter oat cups, a perfect treat for Christmas.
Ingredients

- 1 cup rolled oats
- 1/2 cup peanut butter
- 1/3 cup honey
- 1/4 cup melted coconut oil
- 1 teaspoon vanilla extract
- Pinch of salt
- Optional: Chocolate chips, shredded coconut, or sprinkles for topping
Instructions
- Line a muffin tin with liners.
- In a medium bowl, combine rolled oats, peanut butter, honey, melted coconut oil, vanilla extract, and salt.
- Mix until well combined.
- Spoon the mixture into the muffin liners, filling each about two-thirds full.
- If using, press chocolate chips, shredded coconut, or sprinkles into the tops of the cups.
- Place the muffin tin in the freezer for at least 30 minutes, or until firm.
- Once firm, transfer the cups to an airtight container and store in the freezer.
Notes
- For a firmer texture, add an extra tablespoon of coconut oil.
- If the mixture is too dry, add a little more peanut butter or honey.
- These cups can be stored in the freezer for up to 2 weeks.
