Ingredients

  • 15 Oreo cookies, finely crushed
  • 1/4 cup butter, melted
  • 8 ounces cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 teaspoon peppermint extract
  • 2 cups heavy cream, cold
  • 1/2 cup powdered sugar
  • 1/4 cup chopped Andes mints or other mint chocolate candy

Instructions

  1. Combine crushed Oreos and melted butter. Press into the bottom of a 9-inch pie plate or springform pan. Refrigerate for 30 minutes.
  2. Beat cream cheese and granulated sugar until smooth. Stir in peppermint extract.
  3. In a separate bowl, whip cold heavy cream until soft peaks form. Gradually add powdered sugar and beat until stiff peaks form.
  4. Fold whipped cream into the cream cheese mixture.
  5. Pour filling over the chilled crust. Sprinkle with chopped mint chocolate candy.
  6. Refrigerate for at least 4 hours, or until firm.
  7. Slice and serve.
