- 200g digestive biscuits, crushed
- 100g unsalted butter
- 100g dark chocolate, chopped
- 50g caster sugar
- 2 tablespoons golden syrup
- 50g dried fruit (like raisins or cranberries), chopped
- 50g nuts (like walnuts or almonds), chopped
- 1 teaspoon vanilla extract
- Optional: Cocoa powder for dusting
Instructions
- Line a small loaf tin or cake tin with parchment paper.
- Melt the butter, dark chocolate, caster sugar, and golden syrup in a saucepan over low heat. Stir until smooth.
- Remove from heat and stir in the crushed biscuits, dried fruit, nuts, and vanilla extract. Mix well until everything is coated.
- Press the mixture firmly into the prepared tin.
- Chill in the refrigerator for at least 2-3 hours, or until firm.
- Once firm, turn out the cake and dust with cocoa powder if desired.
- Slice and serve.
Notes
- You can use milk chocolate instead of dark chocolate for a sweeter taste.
- Experiment with different types of dried fruit and nuts.
- For a festive touch, decorate with extra chocolate or sprinkles.
