Description
A classic Niçoise tart with caramelized onions, black olives, and anchovies on a thin crust.
Ingredients

- 1 1/2 cups all-purpose flour
- 1/2 tsp salt
- 1/2 cup warm water
- 2 tbsp olive oil
- 2 large onions, thinly sliced
- 1 tsp sugar
- 1 tbsp fresh thyme leaves
- 1/2 cup black olives, pitted
- 6 anchovy fillets
- 1 tbsp capers (optional)
Instructions
- Mix flour and salt in a bowl. Add water and olive oil to form a dough. Knead for 5 minutes, then rest for 30 minutes.
- Cook onions in olive oil over low heat for 30 minutes until caramelized. Add sugar and thyme.
- Roll dough into a thin circle and place on a baking sheet.
- Spread caramelized onions over the dough. Arrange olives, anchovies, and capers on top.
- Bake at 375°F (190°C) for 20-25 minutes until crust is golden.
Notes
- Let the dough rest for best texture.
- Use a non-stick pan for even cooking.
- Serve warm or at room temperature.
