A comforting and flavorful porridge with mushrooms and shrimp.
Ingredients

- 1 cup rice
- 6 cups water
- 1/2 pound shrimp, peeled and deveined
- 1 cup sliced mushrooms
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- Salt and pepper to taste
- Green onions, chopped, for garnish
Instructions
- Rinse the rice under cold water.
- In a large pot, combine the rice and water. Bring to a boil, then reduce heat and simmer, covered, for 30-40 minutes, or until the rice breaks down and the porridge thickens, stirring occasionally.
- While the porridge simmers, heat a separate pan over medium heat. Add a little oil and sauté the garlic and ginger until fragrant.
- Add the mushrooms and cook until softened.
- Add the shrimp and cook until pink and opaque.
- Stir the mushroom and shrimp mixture into the porridge.
- Stir in the soy sauce and sesame oil.
- Season with salt and pepper to taste.
- Serve hot, garnished with chopped green onions.
Notes
- Adjust the consistency of the porridge by adding more water if needed.
- You can use other vegetables like carrots or peas.
- Add a dash of white pepper for extra flavor.
