Ingredients

- 2 cups grated zucchini
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 teaspoon salt
- 1 teaspoon ground cinnamon
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 3 large eggs
- 1 cup vegetable oil
- 2 teaspoons vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Grease a loaf pan.
- In a bowl, whisk flour, baking soda, baking powder, salt, and cinnamon.
- In another bowl, beat eggs, sugars, oil, and vanilla until smooth.
- Stir grated zucchini into the wet mixture.
- Gradually add dry ingredients to the wet mixture, mixing until just combined.
- Pour batter into the prepared loaf pan.
- Bake for 50-60 minutes or until a toothpick comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack.
Notes
- Grate zucchini finely for even distribution.
- Do not overmix the batter to keep the bread tender.
- Store in an airtight container for up to 3 days.
