Create a refreshing and decadent mint chocolate chip ice cream cake perfect for any celebration.
Ingredients

- 1 (16.5 ounce) package chocolate cake mix
- 1 1/3 cups water
- 1/2 cup vegetable oil
- 3 large eggs
- 1 quart mint chocolate chip ice cream, softened
- 1 (12 ounce) container frozen whipped topping, thawed
- 1/2 cup hot fudge topping, warmed
- 1/4 cup miniature chocolate chips
Instructions
- Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 8-inch round cake pans.
- Prepare cake mix according to package directions using water, oil, and eggs. Pour batter evenly into prepared pans.
- Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean. Let cakes cool in pans for 10 minutes before inverting onto a wire rack to cool completely.
- Place one cake layer on a serving platter. Spread softened mint chocolate chip ice cream evenly over the cake layer.
- Top with the second cake layer.
- Frost the entire cake with thawed whipped topping.
- Drizzle warm hot fudge topping over the top of the cake.
- Sprinkle miniature chocolate chips around the edge of the cake.
- Freeze for at least 4 hours, or until firm.
Notes
- You can use any flavor of ice cream you prefer.
- For easier slicing, dip your knife in hot water before cutting.
- Store leftovers in the freezer.
