A creamy and cheesy chicken casserole perfect for a comforting meal.
Ingredients

- 2 cups cooked shredded chicken
- 1 (10.5 ounce) can condensed cream of chicken soup
- 1 cup sour cream
- 1/2 cup mayonnaise
- 1/2 cup chopped onion
- 1/2 cup chopped celery
- 1/2 cup chopped green bell pepper
- 1 cup shredded cheddar cheese
- 1 cup crushed butter crackers (such as Ritz)
- 1/4 cup melted butter
- Salt and pepper to taste
Instructions
- Preheat oven to 350°F (175°C).
- In a large bowl, combine chicken, cream of chicken soup, sour cream, mayonnaise, onion, celery, and green bell pepper. Mix well.
- Stir in 1/2 cup of the shredded cheddar cheese.
- Pour mixture into a 9×13 inch baking dish.
- In a small bowl, combine crushed crackers and melted butter. Stir until well combined.
- Sprinkle cracker mixture over the top of the casserole.
- Sprinkle remaining 1/2 cup of cheddar cheese over the cracker topping.
- Bake for 25-30 minutes, or until bubbly and golden brown.
- Let stand for 5 minutes before serving.
Notes
- You can use leftover rotisserie chicken for convenience.
- Feel free to add other vegetables like mushrooms or peas.
- Adjust salt and pepper to your preference.
