Description
A hearty and flavorful Mexican-inspired casserole featuring tater tots, seasoned ground beef, and a creamy, cheesy sauce.

- 1 pound ground beef
- 1 packet taco seasoning
- 1 can (15 ounces) black beans, rinsed and drained
- 1 can (10 ounces) Rotel diced tomatoes and green chilies, undrained
- 1 can (10.5 ounces) condensed cream of mushroom soup
- 1 cup sour cream
- 2 cups shredded cheddar cheese, divided
- 1 bag (32 ounces) tater tots
Instructions
- Preheat your oven to 375°F (190°C).
- Brown the ground beef in a skillet over medium-high heat. Drain off any excess grease.
- Stir in the taco seasoning, black beans, and Rotel tomatoes with their juice. Cook for 2-3 minutes until heated through.
- In a separate bowl, mix the cream of mushroom soup and sour cream.
- Stir the soup mixture into the beef and bean mixture.
- Add 1 cup of the shredded cheddar cheese to the beef mixture and stir well.
- Pour the beef mixture into a 9×13 inch baking dish.
- Arrange the tater tots evenly over the top of the beef mixture.
- Sprinkle the remaining 1 cup of cheddar cheese over the tater tots.
- Bake for 25-30 minutes, or until the tater tots are golden brown and the casserole is bubbly.
- Let stand for 5 minutes before serving.
Notes
- For extra spice, add a pinch of cayenne pepper or a diced jalapeño to the beef mixture.
- Serve with your favorite Mexican toppings like salsa, guacamole, or cilantro.
