- 1 lb ground beef
- 1 packet taco seasoning
- 1 can diced tomatoes (10 oz)
- 1 can black beans (15 oz, drained)
- 1 cup corn kernels
- 1/2 cup diced onion
- 1/2 cup diced bell pepper
- 2 cups shredded cheddar cheese
- 1 bag frozen tater tots (32 oz)
- 1/2 cup sour cream
- 1/4 cup sliced jalapeños
- 1/4 cup chopped cilantro
Instructions
- Preheat oven to 375°F (190°C).
- Brown ground beef in a skillet over medium heat. Drain excess fat.
- Add taco seasoning, diced tomatoes, black beans, corn, onion, and bell pepper. Simmer for 5 minutes.
- Spread beef mixture in a 9×13-inch baking dish.
- Top with shredded cheese.
- Arrange tater tots in a single layer over the cheese.
- Bake for 35-40 minutes until tater tots are golden and crispy.
- Garnish with sour cream, jalapeños, and cilantro.
- Serve hot.

- For spicier flavor, use hot taco seasoning or extra jalapeños.
- Vegetarian version: Substitute ground beef with plant-based crumbles.
