- 1 lb ground beef
- 1 packet taco seasoning
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chilies
- 8 flour tortillas
- 2 cups shredded cheddar cheese
- 1 cup sour cream
- 1/2 cup sliced black olives
- 1/4 cup chopped fresh cilantro
Instructions
- Preheat oven to 375°F (190°C).
- Brown ground beef in a skillet over medium heat. Drain excess fat.
- Stir in taco seasoning, black beans, corn, and diced tomatoes. Simmer for 5 minutes.
- Layer half the tortillas in a greased 9×13-inch baking dish.
- Spread half the beef mixture over the tortillas, then top with half the cheese.
- Repeat layers with remaining tortillas, beef mixture, and cheese.
- Bake for 20 minutes or until cheese is melted and bubbly.
- Top with sour cream, black olives, and cilantro before serving.
Notes
- Use corn tortillas for a gluten-free version.
- Add jalapeños for extra spice.
- Leftovers can be refrigerated for up to 3 days.
