  • 1 packet taco seasoning
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 8 flour tortillas
  • 2 cups shredded cheddar cheese
  • 1 cup sour cream
  • 1/2 cup sliced black olives
  • 1/4 cup chopped fresh cilantro

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Brown ground beef in a skillet over medium heat. Drain excess fat.
  3. Stir in taco seasoning, black beans, corn, and diced tomatoes. Simmer for 5 minutes.
  4. Layer half the tortillas in a greased 9×13-inch baking dish.
  5. Spread half the beef mixture over the tortillas, then top with half the cheese.
  6. Repeat layers with remaining tortillas, beef mixture, and cheese.
  7. Bake for 20 minutes or until cheese is melted and bubbly.
  8. Top with sour cream, black olives, and cilantro before serving.
