Ingredients

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 cup water
  • 8 ounces cream cheese, cubed
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup salsa

Instructions

  1. Heat olive oil in a skillet over medium heat. Add chicken breasts.
  2. Sprinkle chili powder, cumin, garlic powder, onion powder, and salt over the chicken. Cook until chicken is browned on both sides.
  3. Add water to the skillet. Cover and simmer for 10 minutes, or until chicken is cooked through.
  4. Remove chicken and shred it using two forks. Return shredded chicken to the skillet.
  5. Reduce heat to low. Add cream cheese cubes and stir until melted and smooth.
  6. Stir in Monterey Jack cheese until fully melted.
  7. Stir in salsa until combined. Heat through for 2 minutes.
  8. Serve warm with tortilla chips.

Notes

  • For a spicier dip, add diced jalapeños with the salsa.
  • You can cook the chicken in a slow cooker instead of a skillet.
