A creamy and flavorful casserole inspired by Mexican street corn.
Ingredients

- 4 cups frozen corn
- 8 ounces cream cheese
- 1/2 cup sour cream
- 1/4 cup mayonnaise
- 1/4 cup chopped cilantro
- 1/4 cup cotija cheese, crumbled
- 1/4 cup lime juice
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/4 teaspoon garlic powder
- Salt and pepper to taste
- 1/4 cup crumbled cojita cheese for topping
- 1/4 cup chopped cilantro for topping
- Lime wedges for serving
Instructions
- Preheat oven to 375°F (190°C).
- In a large bowl, combine corn, cream cheese, sour cream, mayonnaise, cilantro, cotija cheese, lime juice, chili powder, cumin, garlic powder, salt, and pepper.
- Stir until well combined.
- Pour mixture into a 9×13 inch baking dish.
- Bake for 20-25 minutes, or until bubbly and heated through.
- Remove from oven and top with additional cotija cheese and cilantro.
- Serve hot with lime wedges.
Notes
- You can use fresh corn instead of frozen.
- Adjust spice level to your preference.
- This casserole can be made ahead of time and reheated.
