Ingredients

  • 4 cups frozen corn
  • 8 ounces cream cheese
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1/4 cup chopped cilantro
  • 1/4 cup cotija cheese, crumbled
  • 1/4 cup lime juice
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/4 cup crumbled cojita cheese for topping
  • 1/4 cup chopped cilantro for topping
  • Lime wedges for serving

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, combine corn, cream cheese, sour cream, mayonnaise, cilantro, cotija cheese, lime juice, chili powder, cumin, garlic powder, salt, and pepper.
  3. Stir until well combined.
  4. Pour mixture into a 9×13 inch baking dish.
  5. Bake for 20-25 minutes, or until bubbly and heated through.
  6. Remove from oven and top with additional cotija cheese and cilantro.
  7. Serve hot with lime wedges.

Notes

  • You can use fresh corn instead of frozen.
