Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Separate the egg yolks from the whites.
  3. In a bowl, whisk together the egg yolks, milk, salt, and pepper until well combined.
  4. In a separate, clean bowl, beat the egg whites until stiff peaks form.
  5. Gently fold the beaten egg whites into the egg yolk mixture until just combined. Be careful not to overmix.
  6. Melt the butter in an oven-safe skillet over medium heat.
  7. Pour the egg mixture into the hot skillet.
  8. If using cheese, sprinkle it evenly over the top.
  9. Cook for 2-3 minutes until the bottom starts to set.
  10. Transfer the skillet to the preheated oven.
  11. Bake for 10-15 minutes, or until the soufflé omelette is puffed up and golden brown.
