Easy and flavorful Mediterranean chickpea pita tacos with fresh vegetables and a creamy tahini dressing.


Ingredients

  • 1 can (15 ounces) chickpeas, rinsed and drained
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste
  • 4 whole wheat pita breads
  • 1/2 cup chopped cucumber
  • 1/2 cup chopped tomatoes
  • 1/4 cup chopped red onion
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons tahini
  • 1 tablespoon lemon juice
  • 1 tablespoon water
  • 1 clove garlic, minced

Instructions

  1. In a bowl, mash chickpeas with a fork.
  2. Add olive oil, cumin, paprika, garlic powder, salt, and pepper. Mix well.
  3. Warm pita breads.
  4. In a small bowl, whisk together tahini, lemon juice, water, and minced garlic until smooth.
  5. Fill each pita with mashed chickpeas.
  6. Top with cucumber, tomatoes, red onion, and parsley.
  7. Drizzle with tahini dressing.

Notes

  • For extra flavor, add a pinch of cayenne pepper to the chickpea mixture.
  • You can substitute Greek yogurt for tahini dressing if preferred.
