Easy and flavorful Mediterranean chickpea pita tacos with fresh vegetables and a creamy tahini dressing.
Ingredients

- 1 can (15 ounces) chickpeas, rinsed and drained
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1/2 teaspoon paprika
- 1/4 teaspoon garlic powder
- Salt and pepper to taste
- 4 whole wheat pita breads
- 1/2 cup chopped cucumber
- 1/2 cup chopped tomatoes
- 1/4 cup chopped red onion
- 1/4 cup chopped fresh parsley
- 2 tablespoons tahini
- 1 tablespoon lemon juice
- 1 tablespoon water
- 1 clove garlic, minced
Instructions
- In a bowl, mash chickpeas with a fork.
- Add olive oil, cumin, paprika, garlic powder, salt, and pepper. Mix well.
- Warm pita breads.
- In a small bowl, whisk together tahini, lemon juice, water, and minced garlic until smooth.
- Fill each pita with mashed chickpeas.
- Top with cucumber, tomatoes, red onion, and parsley.
- Drizzle with tahini dressing.
Notes
- For extra flavor, add a pinch of cayenne pepper to the chickpea mixture.
- You can substitute Greek yogurt for tahini dressing if preferred.
- Add feta cheese for a salty kick.
