- 2 large sweet potatoes, cubed

- 1 cup black beans, rinsed and drained
- 1/2 cup corn kernels
- 1/4 cup chopped cilantro for garnish
- 2 tablespoons lime juice
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, toss the cubed sweet potatoes with olive oil, maple syrup, chili powder, salt, and pepper until evenly coated.
- Spread the sweet potatoes in a single layer on a baking sheet.
- Roast for 20 to 25 minutes, flipping halfway through, until tender and slightly caramelized.
- In a separate bowl, combine the warm roasted sweet potatoes, black beans, and corn.
- Drizzle with lime juice and toss gently to combine.
- Divide the mixture into serving bowls.
- Garnish with fresh cilantro before serving.
