Mantecadas are traditional Spanish muffins, fluffy and lightly sweetened. Perfect for breakfast or a snack.
Ingredients

- 2 cups all-purpose flour
- 1/2 cup sugar
- 2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup unsalted butter, melted
- 1/2 cup milk
- 2 eggs
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Grease a muffin tin.
- Mix flour, sugar, baking powder, and salt in a bowl.
- In another bowl, whisk melted butter, milk, eggs, and vanilla.
- Combine wet and dry ingredients. Stir until just mixed.
- Pour batter into muffin cups, filling halfway.
- Bake for 18-20 minutes until golden.
- Cool for 5 minutes before serving.
Notes
- Don’t overmix the batter for fluffier muffins.
- Dust with powdered sugar before serving if desired.
