Description
A classic Thai dessert featuring sweet sticky rice, fresh mango, and a creamy coconut sauce.
Ingredients
Scale
- 2 cups glutinous rice
- 1 can (13.5 oz) coconut milk
- 1/2 cup granulated sugar
- 1/2 teaspoon salt
- 2 ripe mangoes, sliced
- 1/4 cup coconut milk (for sauce)
- 1 tablespoon sugar (for sauce)
- 1/2 teaspoon salt (for sauce)
- Toasted sesame seeds (optional, for garnish)
Instructions
- Rinse glutinous rice until water runs clear. Soak rice in water for at least 4 hours or overnight.
- Drain the soaked rice and steam it for 20-25 minutes, or until tender.
- While the rice is steaming, heat 1 can of coconut milk, 1/2 cup sugar, and 1/2 teaspoon salt in a saucepan over medium heat. Stir until sugar and salt dissolve. Do not boil.
- Once the rice is cooked, transfer it to a bowl. Pour the warm coconut milk mixture over the rice and stir gently to combine. Let it sit for 15-20 minutes to absorb the liquid.
- Prepare the sauce by heating 1/4 cup coconut milk, 1 tablespoon sugar, and 1/2 teaspoon salt in a small saucepan over low heat. Stir until sugar and salt dissolve.
- Serve the sticky rice with sliced mangoes. Drizzle the sauce over the top and sprinkle with toasted sesame seeds if desired.
Notes
- Ensure you use glutinous rice (also known as sweet rice) for the correct texture.
- Ripe mangoes are key to the sweetness and flavor of this dessert.
- Adjust the sweetness of the coconut milk mixture and sauce to your preference.
