- 1 cup full-fat coconut milk, chilled overnight
- 1/4 cup powdered sugar
- 1 teaspoon lime juice
- 1/2 teaspoon vanilla extract

- Toasted coconut flakes for garnish (optional)
Instructions
- Scoop the thick cream from the top of the chilled coconut milk can, leaving the water behind. Place the coconut cream in a chilled bowl.
- Whip the coconut cream with an electric mixer until fluffy.
- Gradually add the powdered sugar, lime juice, and vanilla extract. Mix until well combined and smooth.
- Gently fold in the mango puree until no streaks remain.
- Spoon the mousse into individual serving cups or glasses.
- Chill in the refrigerator for at least 2 hours, or until set.
- Garnish with fresh mint leaves and toasted coconut flakes before serving, if desired.
Notes
- Ensure your coconut milk is full-fat and has been chilled for at least 12 hours to allow the cream to separate.
- Adjust sweetness to your preference by adding more or less powdered sugar.
- For a firmer mousse, you can add 1 teaspoon of agar-agar powder dissolved in a tablespoon of water to the mango puree before folding it into the coconut cream.
