Limoncello Cake is a moist, zesty Italian dessert infused with Limoncello liqueur and fresh lemon zest. Perfect for any occasion, this cake is light, fluffy, and full of citrus flavor, making it a delightful treat for brunch, dessert, or a special gathering.

Ingredients

Scale
  • 1 ½ cups all-purpose flour
  • 1 tsp baking powder
  • ¼ tsp salt
  • ½ cup unsalted butter, softened
  • ¾ cup granulated sugar
  • 3 large eggs
  • ½ cup Limoncello liqueur
  • ¼ cup whole milk
  • Zest of 1 lemon
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract
  • Powdered sugar (for dusting)
  • Lemon slices (for garnish, optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9-inch cake pan.
  2. In a bowl, whisk together flour, baking powder, and salt. Set aside.
  3. In another bowl, beat butter and sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition.
  5. Stir in Limoncello, milk, lemon zest, lemon juice, and vanilla extract.
  6. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  7. Pour the batter into the prepared pan and smooth the top.
  8. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  9. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack.
  10. Once cooled, dust with powdered sugar and garnish with lemon slices if desired.

Notes

  • For a richer texture, add 2 tbsp sour cream to the batter.
  • To make it alcohol-free, replace Limoncello with lemon juice and simple syrup.
  • Store at room temperature for 2 days or refrigerate for up to 5 days.
  • For a stronger lemon flavor, add an extra teaspoon of lemon zest.
  • Enhance the presentation with a Limoncello glaze drizzle.
