Ingredients

  • 1 pound pasta (e.g., spaghetti or linguine)
  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 1 bunch kale, stems removed and chopped
  • 1/2 cup reserved pasta water
  • 1/4 cup fresh lemon juice
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/2 cup grated Parmesan cheese
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Cook pasta according to package directions. Reserve about 1 cup of the starchy cooking water before draining.
  2. While pasta cooks, heat olive oil in a large skillet over medium heat.
  3. Add minced garlic and cook for 1 minute until fragrant. Do not let it brown.
  4. Add the chopped kale to the skillet. Cook, stirring occasionally, until the kale wilts, about 3 to 5 minutes.
  5. Drain the pasta and add it directly to the skillet with the kale and garlic.
  6. Pour in the lemon juice and add the oregano and thyme. Toss to combine.
  7. Add 1/2 cup of the reserved pasta water and the grated Parmesan cheese. Toss continuously until a light sauce forms, adding more pasta water if the mixture seems too dry.
  8. Season with salt and black pepper to your preference.
  9. Serve immediately.

  • Use fresh herbs like parsley or basil for a brighter flavor if you have them.
  • For added protein, you can stir in cooked chicken or white beans at the end.
