  • 1/4 cup fresh lemon juice
  • 2 tablespoons olive oil
  • 1 tablespoon dried herbs (such as oregano, basil, thyme)
  • Salt and black pepper to taste
  • 1/4 cup chopped red onion
  • 1/2 cup chopped bell pepper
  • 1/4 cup chopped fresh parsley

Instructions

  1. Cook pasta according to package directions. Drain and rinse with cold water.
  2. While pasta is cooking, season chicken breasts with salt, pepper, and half of the dried herbs.
  3. Heat olive oil in a skillet over medium-high heat. Cook chicken for 6-8 minutes per side, or until cooked through.
  4. Let chicken rest for a few minutes, then dice into bite-sized pieces.
  5. In a large bowl, combine cooked pasta, diced chicken, red onion, bell pepper, and fresh parsley.
  6. In a small bowl, whisk together lemon juice and remaining dried herbs. Pour over pasta salad and toss to combine.
  7. Chill for at least 30 minutes before serving.
