Description
A refreshing pasta salad with lemon herb chicken, perfect for a light meal.
Ingredients

- 1 pound boneless, skinless chicken breasts
- 8 ounces pasta of your choice
- 1/4 cup fresh lemon juice
- 2 tablespoons olive oil
- 1 tablespoon dried herbs (such as oregano, basil, thyme)
- Salt and black pepper to taste
- 1/4 cup chopped red onion
- 1/2 cup chopped bell pepper
- 1/4 cup chopped fresh parsley
Instructions
- Cook pasta according to package directions. Drain and rinse with cold water.
- While pasta is cooking, season chicken breasts with salt, pepper, and half of the dried herbs.
- Heat olive oil in a skillet over medium-high heat. Cook chicken for 6-8 minutes per side, or until cooked through.
- Let chicken rest for a few minutes, then dice into bite-sized pieces.
- In a large bowl, combine cooked pasta, diced chicken, red onion, bell pepper, and fresh parsley.
- In a small bowl, whisk together lemon juice and remaining dried herbs. Pour over pasta salad and toss to combine.
- Chill for at least 30 minutes before serving.
Notes
- You can use any type of pasta you prefer.
- Feel free to add other vegetables like cherry tomatoes, cucumbers, or olives.
- Adjust the amount of lemon juice and herbs to your liking.
