Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter and powdered sugar until light and fluffy.
  3. Beat in the egg and vanilla extract.
  4. In a separate bowl, whisk together the flour and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Press the dough evenly into the bottom and up the sides of a 9-inch tart pan with a removable bottom.
  7. Bake the crust for 15-20 minutes, or until lightly golden. Let cool slightly.
  8. While the crust cools, prepare the lemon curd. In a medium saucepan, whisk together granulated sugar and cornstarch.
  9. Whisk in the eggs, lemon juice, and lemon zest.
  10. Cook over medium heat, stirring constantly, until the mixture thickens and bubbles.
  11. Remove from heat and stir in the water and light corn syrup.
  12. Pour the lemon curd into the pre-baked tart shell.
  13. Bake the tart for another 20-25 minutes, or until the curd is set.
  14. Let the tart cool completely on a wire rack.
  15. For the glaze, whisk together powdered sugar and milk until smooth. Add more milk if needed to reach desired consistency.
  16. Drizzle the glaze over the cooled tart.
  17. Chill the tart for at least 1 hour before serving.
