A classic lemon curd tart with a sweet dough crust, perfect for Easter or Christmas celebrations.

- 1 1/2 cups all-purpose flour
- 1/2 cup powdered sugar
- 1/2 cup unsalted butter, softened
- 1 large egg
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 2 cups granulated sugar
- 1/2 cup cornstarch
- 4 large eggs
- 1 cup fresh lemon juice
- 1 tablespoon lemon zest
- 1/4 cup water
- 2 tablespoons light corn syrup
- 1/4 cup powdered sugar (for glaze)
- 1–2 tablespoons milk (for glaze)
Instructions
- Preheat oven to 350°F (175°C).
- In a large bowl, cream together the softened butter and powdered sugar until light and fluffy.
- Beat in the egg and vanilla extract.
- In a separate bowl, whisk together the flour and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Press the dough evenly into the bottom and up the sides of a 9-inch tart pan with a removable bottom.
- Bake the crust for 15-20 minutes, or until lightly golden. Let cool slightly.
- While the crust cools, prepare the lemon curd. In a medium saucepan, whisk together granulated sugar and cornstarch.
- Whisk in the eggs, lemon juice, and lemon zest.
- Cook over medium heat, stirring constantly, until the mixture thickens and bubbles.
- Remove from heat and stir in the water and light corn syrup.
- Pour the lemon curd into the pre-baked tart shell.
- Bake the tart for another 20-25 minutes, or until the curd is set.
- Let the tart cool completely on a wire rack.
- For the glaze, whisk together powdered sugar and milk until smooth. Add more milk if needed to reach desired consistency.
- Drizzle the glaze over the cooled tart.
- Chill the tart for at least 1 hour before serving.

- Ensure the butter is softened, not melted, for the crust.
- Do not overmix the tart dough.
- Stir the lemon curd constantly to prevent lumps.
- Allow the tart to cool completely before glazing.
