Ingredients

- 1 cup butter, softened
- 1 cup confectioners’ sugar
- 2 tablespoons lemon juice
- 1 1/2 teaspoons grated lemon zest
- 2 1/2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup granulated sugar for rolling
Instructions
- Preheat oven to 350 degrees F (175 degrees C). Line baking sheets with parchment paper.
- In a large bowl, cream together the softened butter and confectioners’ sugar until light and fluffy.
- Beat in the lemon juice and lemon zest.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Roll the dough into 1-inch balls.
- Roll each ball in granulated sugar to coat.
- Place cookies 2 inches apart on the prepared baking sheets.
- Bake for 10-12 minutes, or until the edges are lightly golden.
- Let cookies cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.
Notes
- For extra lemon flavor, add a drop or two of lemon extract to the dough.
- Store cookies in an airtight container at room temperature for up to 3 days.
