- 200g graham cracker crumbs
- 100g melted butter
- 500g cream cheese
- 150g granulated sugar
- 3 large eggs
- 1 lemon (zested and juiced)
- 150g fresh blueberries
- 1 tsp vanilla extract
Instructions
- Preheat oven to 160°C (325°F).
- Mix graham cracker crumbs with melted butter and press into a springform pan.
- Beat cream cheese and sugar until smooth.
- Add eggs one at a time, then mix in lemon zest, juice, and vanilla.
- Fold in blueberries gently.
- Pour mixture over the crust and bake for 45-50 minutes.
- Let cool, then refrigerate for at least 4 hours before serving.
Notes
- Use room-temperature cream cheese for smoother texture.
- If blueberries sink, toss them in flour before adding.
- Chill thoroughly for best slicing.
