Description
Kielbasa, Peppers, and Potato Hash is a hearty one-skillet meal with crispy potatoes, smoky sausage, and colorful veggies. Perfect for any time of day.

			- 1 lb kielbasa sausage, sliced into coins or cubes
 - 3–4 medium potatoes (Yukon gold or russet), cubed
 - 1 red bell pepper, chopped
 - 1 yellow or orange bell pepper, chopped
 - 1 small onion, chopped
 - 2 cloves garlic, minced
 - 2–3 tbsp olive oil or butter, divided
 - ½ tsp smoked paprika
 - Salt and pepper, to taste
 - Chopped fresh parsley, for garnish
 
Instructions
- Par-cook cubed potatoes by boiling for 5–6 minutes or microwaving covered with water for 4 minutes. Drain and set aside.
 - In a large skillet over medium heat, heat 1 tbsp oil. Add kielbasa and cook until browned on all sides, about 4–5 minutes. Remove and set aside.
 - Add more oil if needed. Sauté peppers and onions for 5–7 minutes until softened. Add garlic and cook for 30 seconds. Remove and set aside.
 - Add pre-cooked potatoes to the skillet. Cook undisturbed for 4–5 minutes, then stir and continue cooking until crispy and golden, about 10–12 minutes total. Season with salt, pepper, and smoked paprika.
 - Return sausage and veggies to the skillet. Toss everything together and cook for another 2–3 minutes until heated through.
 - Garnish with chopped parsley and serve hot.
 
Notes
- Use sweet potatoes for a sweeter variation.
 - Spicy sausage or chorizo can replace kielbasa for added heat.
 - Add cheese or eggs on top for a heartier meal.
 - Stir in spinach or kale at the end for added greens.
