Tangy key lime pie bars with a sweet graham cracker crust.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 6 tablespoons unsalted butter, melted
  • 1 (14 ounce) can sweetened condensed milk
  • 1/2 cup key lime juice
  • 4 large egg yolks
  • 1 teaspoon lime zest

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper.
  2. In a medium bowl, combine graham cracker crumbs and sugar. Pour in melted butter and stir until crumbs are evenly moistened. Press mixture firmly into the bottom of the prepared pan.
  3. Bake the crust for 8-10 minutes, until lightly golden. Remove from oven and let cool slightly.
  4. In a separate bowl, whisk together sweetened condensed milk, key lime juice, egg yolks, and lime zest until smooth.
  5. Pour the lime filling over the baked crust.
  6. Bake for 20-25 minutes, or until the center is set but still slightly jiggly.
  7. Let the bars cool completely in the pan on a wire rack.
  8. Chill in the refrigerator for at least 2 hours before cutting into bars.

Notes

  • For a stronger lime flavor, add an extra tablespoon of key lime juice.
