- 1 box white cake mix
- 1 (3 ounce) package Key lime flavored gelatin
- 1 cup all-purpose flour
- 1 cup white sugar
- 3/4 teaspoon salt
- 1 cup vegetable oil
- 4 large eggs
- 1 cup Key lime juice
- 1/2 cup water
- 1 teaspoon Key lime zest
- 1 (8 ounce) package cream cheese, softened
- 1/2 cup butter, softened
- 4 cups confectioners’ sugar
- 1/3 cup Key lime juice
- 1 teaspoon Key lime zest
Instructions
- Preheat oven to 325 degrees F (160 degrees C). Grease and flour a 9×13 inch baking pan.
- In a large bowl, combine cake mix, gelatin, flour, sugar, and salt. Whisk to combine.
- In a separate bowl, whisk together oil, eggs, 1 cup Key lime juice, water, and 1 teaspoon Key lime zest.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
- Pour batter into the prepared baking pan.
- Bake for 45 to 50 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes before inverting onto a wire rack to cool completely.
- While the cake cools, prepare the frosting. In a large bowl, beat cream cheese and butter until smooth and creamy.
- Gradually add confectioners’ sugar, alternating with 1/3 cup Key lime juice, beating until smooth and spreadable. Stir in 1 teaspoon Key lime zest.
- Once the cake is completely cool, spread the frosting over the top and sides.
Notes
- For a stronger Key lime flavor, use fresh Key lime juice.
- Ensure all ingredients for the frosting are at room temperature for easy mixing.
