Ingredients

- 2 cups pecans
- 1/4 cup erythritol or monk fruit sweetener
- 1 tsp cinnamon
- 1/4 tsp salt
- 1 egg white
- 1 tsp vanilla extract
Instructions
- Preheat oven to 300°F (150°C). Line a baking sheet with parchment paper.
- In a bowl, whisk the egg white and vanilla extract until frothy.
- Add pecans to the bowl and toss to coat evenly.
- In a separate bowl, mix erythritol, cinnamon, and salt.
- Sprinkle the sweetener mixture over the pecans and stir well.
- Spread pecans in a single layer on the baking sheet.
- Bake for 30-35 minutes, stirring halfway, until golden and crisp.
- Let cool completely before serving.
Notes
- Store in an airtight container for up to 2 weeks.
- For extra crunch, bake a few minutes longer.
