Ingredients

  • 2 large eggs
  • 1/2 cup almond flour
  • 1/4 cup erythritol
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup fresh blueberries
  • Optional: Keto-friendly glaze

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a donut pan or line with silicone donut molds.
  2. In a blender or food processor, combine cottage cheese and eggs. Blend until smooth.
  3. Add almond flour, erythritol, melted butter, vanilla extract, baking powder, and salt to the blender. Blend again until well combined.
