Description
Simple recipe for tender, moist chicken thighs cooked slowly in a slow cooker.

- 6 bone-in, skin-on chicken thighs
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/4 cup chicken broth
Instructions
- Pat the chicken thighs dry with paper towels.
- In a small bowl, mix the salt, pepper, paprika, and garlic powder.
- Rub the spice mixture evenly over all sides of the chicken thighs.
- Heat the olive oil in a large skillet over medium-high heat. Sear the chicken thighs, skin-side down, for 3-4 minutes until the skin is browned.
- Transfer the seared chicken thighs to the slow cooker, skin-side up.
- Pour the chicken broth into the bottom of the slow cooker.
- Cover and cook on low for 5 to 6 hours, or on high for 3 to 4 hours, until the chicken is cooked through and tender.
- Remove the chicken from the slow cooker and serve immediately.
Notes
- For crispier skin, place the cooked thighs on a baking sheet and broil for 2-3 minutes before serving.
- You can add vegetables like carrots or potatoes to the slow cooker with the chicken.
