  • 2 cups vegetable broth

  • 1 cup broccoli florets
  • 1 cup chopped sweet potato
  • 2 teaspoons jerk seasoning
  • 1 large apple, cored and diced
  • 1 tablespoon maple syrup
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1/4 cup chopped fresh cilantro for garnish

Instructions

  1. Cook farro: Combine farro and vegetable broth in a saucepan. Bring to a boil, then reduce heat, cover, and simmer for 20 to 25 minutes, or until liquid is absorbed and farro is tender. Fluff with a fork.
  2. Prepare vegetables: While farro cooks, heat olive oil in a large skillet over medium heat. Add bell pepper, broccoli, and sweet potato. Cook for 5 minutes.
  3. Season vegetables: Sprinkle jerk seasoning over the vegetables and cook for another 5 minutes, stirring occasionally, until vegetables are tender-crisp.
  4. Prepare apples: In a small bowl, toss the diced apple with maple syrup and dried thyme and rosemary.
  5. Combine: Add the seasoned apples to the skillet with the vegetables. Cook for 2 minutes until apples are slightly softened but still hold their shape.
  6. Assemble bowls: Divide the cooked farro among serving bowls. Top with the jerk vegetable and apple mixture. Garnish with fresh cilantro.
