- 1 pound fettuccine pasta
- 1.5 pounds boneless, skinless chicken breasts, cut into bite-sized pieces
- 2 tablespoons jerk seasoning (store-bought or homemade)
- 2 tablespoons olive oil
- 4 tablespoons unsalted butter
- 2 cloves garlic, minced
- 2 cups heavy cream
- 1 cup grated Parmesan cheese
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Cook the fettuccine according to package directions until al dente. Drain and set aside.
- Toss the chicken pieces with the jerk seasoning.
- Heat the olive oil in a large skillet over medium-high heat. Add the seasoned chicken and cook until browned and cooked through, about 6-8 minutes. Remove chicken from the skillet and set aside.
- Reduce the heat to medium. Add the butter to the same skillet and let it melt.
- Add the minced garlic and cook for 1 minute until fragrant. Do not let it brown.
- Pour in the heavy cream and bring the mixture to a gentle simmer. Cook for 3-5 minutes, stirring occasionally, until the sauce thickens slightly.
- Reduce the heat to low. Gradually stir in the Parmesan cheese until the sauce is smooth.
- Season the sauce with salt and pepper.
- Add the cooked chicken and the drained pasta to the skillet. Toss everything together until the pasta and chicken are evenly coated with the Alfredo sauce.
- Serve immediately.
Notes
- Adjust the amount of jerk seasoning based on your preference for heat.
- For a thinner sauce, add a splash of the reserved pasta water while mixing.
- Use pre-shredded Parmesan cheese for easier melting, or grate your own for better flavor.
