Ingredients

- 2 3/4 cups granulated sugar
- 1/2 cup light corn syrup
- 1/2 cup water
- 1/4 teaspoon salt
- 2 egg whites
- 1 teaspoon vanilla extract
- 1 (3 ounce) package cherry flavored gelatin mix
- 1/2 cup chopped walnuts (optional)
Instructions
- Combine sugar, corn syrup, water, and salt in a heavy saucepan.
- Cook over medium heat, stirring constantly, until sugar dissolves and mixture begins to boil.
- Continue cooking, without stirring, until mixture reaches 260 degrees F (127 degrees C) on a candy thermometer.
- While syrup is cooking, beat egg whites in a large bowl until stiff peaks form.
- Slowly pour hot syrup in a thin stream over beaten egg whites, beating constantly until mixture is very thick and loses its gloss.
- Beat in vanilla extract and cherry gelatin mix.
- Stir in chopped walnuts, if desired.
- Drop by spoonfuls onto wax paper and let cool completely.

- Work quickly when dropping the candy, as it sets up fast.
- Store in an airtight container at room temperature.
