Ingredients

  • 2 3/4 cups granulated sugar
  • 1/2 cup light corn syrup
  • 1/2 cup water
  • 1/4 teaspoon salt
  • 2 egg whites
  • 1 teaspoon vanilla extract
  • 1 (3 ounce) package cherry flavored gelatin mix
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Combine sugar, corn syrup, water, and salt in a heavy saucepan.
  2. Cook over medium heat, stirring constantly, until sugar dissolves and mixture begins to boil.
  3. Continue cooking, without stirring, until mixture reaches 260 degrees F (127 degrees C) on a candy thermometer.
  4. While syrup is cooking, beat egg whites in a large bowl until stiff peaks form.
  5. Slowly pour hot syrup in a thin stream over beaten egg whites, beating constantly until mixture is very thick and loses its gloss.
  6. Beat in vanilla extract and cherry gelatin mix.
  7. Stir in chopped walnuts, if desired.
  8. Drop by spoonfuls onto wax paper and let cool completely.
