Ingredients

  • 1 cup packed brown sugar
  • 1 (20 ounce) can pineapple slices in juice, drained (reserve juice)
  • 1/4 cup maraschino cherries, halved
  • 1 3/4 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius).
  2. Melt 1/2 cup butter in a 9-inch round cake pan. Sprinkle brown sugar evenly over the melted butter.
  3. Arrange pineapple slices on top of the brown sugar mixture. Place a cherry half in the center of each pineapple ring.
  4. In a medium bowl, whisk together flour, baking powder, salt, cinnamon, and nutmeg. Set aside.
  5. In a large bowl, cream together 1/2 cup softened butter and granulated sugar until light and fluffy.
  6. Beat in eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  7. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined.
  8. Pour the batter carefully over the pineapple and cherry layer in the pan.
  9. Bake for 40 to 45 minutes, or until a wooden pick inserted into the center comes out clean.
  10. Let the cake cool in the pan for 10 minutes. Place a serving plate over the cake pan and invert the cake onto the plate. Remove the pan.
  11. Serve warm.

Notes

  • You can substitute the reserved pineapple juice for milk if you prefer a slightly tangier cake batter.
  • For a richer flavor, use dark brown sugar instead of light brown sugar.
