  • 2 cups fresh spinach
  • Grated Parmesan cheese (for garnish, optional)

Instructions

  1. Bring a large pot of salted water to a boil. Cook the pasta according to package instructions, drain, and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add Italian sausage and cook until browned, breaking it apart with a spatula.
  3. Stir in diced onions and garlic, cooking until fragrant and softened.
  4. Add sliced mushrooms and cook until they release their juices and soften.
  5. Pour in diced tomatoes and tomato sauce, then stir in red pepper flakes, oregano, basil, salt, and black pepper.
