Description
Easy and delicious twice baked potato bites perfect for game night.

			- 2 pounds Yukon Gold potatoes, scrubbed
 - 1/2 cup sour cream
 - 1/4 cup unsalted butter, melted
 - 1/4 cup shredded cheddar cheese
 - 2 tablespoons chopped fresh chives
 - 1/2 teaspoon salt
 - 1/4 teaspoon black pepper
 - Optional toppings: crumbled bacon, extra cheese, sour cream, chives
 
Instructions
- Preheat your oven to 400°F (200°C).
 - Prick the potatoes all over with a fork. Place them directly on the oven rack and bake for 50-60 minutes, or until tender when pierced with a knife.
 - Let the potatoes cool slightly until they are easy to handle.
 - Cut each potato in half lengthwise. Scoop out the flesh from each half, leaving about a 1/4-inch shell. Place the scooped-out potato flesh in a medium bowl.
 - Mash the potato flesh with the sour cream, melted butter, cheddar cheese, chives, salt, and pepper until well combined.
 - Spoon the potato mixture back into the potato shells, mounding it slightly.
 - Place the filled potato halves on a baking sheet.
 - Bake for another 15-20 minutes, or until the tops are golden brown and the filling is heated through.
 - Add your favorite optional toppings before serving.
 
Notes
- For crispier shells, you can brush them with a little olive oil before the second baking.
 - Make sure the potatoes are completely cool before scooping out the flesh to prevent them from breaking.
