- 8 oz pepper jack cheese, cut into 12 equal pieces
- 1 cup all-purpose flour

- 1 cup milk
- 1 large egg
- 1 cup panko breadcrumbs

Instructions
- Preheat your deep fryer or a heavy-bottomed pot with vegetable oil to 375°F (190°C).
- Slice the jalapeños in half lengthwise and remove the seeds and membranes.
- Stuff each jalapeño half with a piece of pepper jack cheese.
- In a shallow bowl, whisk together the flour, salt, pepper, garlic powder, and cayenne pepper.
- In another shallow bowl, whisk together the milk and egg.
- In a third shallow bowl, place the panko breadcrumbs.
- Dip each stuffed jalapeño half first into the flour mixture, then into the milk mixture, and finally coat thoroughly with the panko breadcrumbs.
- Carefully place the coated jalapeños into the hot oil, frying in batches to avoid overcrowding the pot.
- Fry for 3-5 minutes, or until golden brown and crispy.
- Remove the rattlesnake bites with a slotted spoon and drain on paper towels.
- Serve immediately.

- For a spicier bite, leave some seeds in the jalapeños.
- Ensure the oil is at the correct temperature for optimal crispiness.
