Ingredients

  • 1 pound ground beef (80/20 blend recommended)
  • 4 slices American cheese
  • 4 burger buns
  • 2 tablespoons butter, softened
  • Salt and black pepper to taste
  • Optional toppings: ketchup, mustard, pickles, onions

Instructions

  1. Divide the ground beef into four equal portions. Gently form each portion into a loose ball. Do not overwork the meat.
  2. Preheat a cast-iron skillet or griddle over medium-high heat.
  3. Butter the cut sides of the burger buns and toast them on the skillet until golden brown. Set aside.
  4. Place the beef balls onto the hot skillet, leaving space between them.
  5. Immediately smash each ball down firmly with a sturdy spatula or burger press to create a thin patty. Season generously with salt and pepper.
  6. Cook for 2-3 minutes, until the edges are browned and crispy.
  7. Flip the patties. Place a slice of American cheese on top of each.
  8. Cook for another 1-2 minutes, until the cheese is melted and the burger is cooked through.
  9. Assemble the burgers on the toasted buns with your desired toppings.
