- 1 pound ground beef (80/20 blend recommended)
- 4 slices American cheese
- 4 burger buns
- 2 tablespoons butter, softened
- Salt and black pepper to taste
- Optional toppings: ketchup, mustard, pickles, onions
Instructions
- Divide the ground beef into four equal portions. Gently form each portion into a loose ball. Do not overwork the meat.
- Preheat a cast-iron skillet or griddle over medium-high heat.
- Butter the cut sides of the burger buns and toast them on the skillet until golden brown. Set aside.
- Place the beef balls onto the hot skillet, leaving space between them.
- Immediately smash each ball down firmly with a sturdy spatula or burger press to create a thin patty. Season generously with salt and pepper.
- Cook for 2-3 minutes, until the edges are browned and crispy.
- Flip the patties. Place a slice of American cheese on top of each.
- Cook for another 1-2 minutes, until the cheese is melted and the burger is cooked through.
- Assemble the burgers on the toasted buns with your desired toppings.
Notes
- For best results, use a high-fat ground beef blend.
- Do not overcrowd the skillet; cook in batches if necessary.
- Smash the patties quickly and firmly for a good sear.
