  • 2 boneless, skinless chicken breasts
  • 1 cup buttermilk
  • 2 cups all-purpose flour
  • 1 tablespoon paprika
  • 1 teaspoon cayenne pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 4 brioche buns
  • 4 tablespoons butter, softened
  • 4 tablespoons mayonnaise
  • Pickle slices, to taste

Instructions

  1. Cut chicken breasts in half horizontally to create four thinner cutlets.
  2. Place chicken cutlets in a bowl and pour buttermilk over them. Marinate for at least 30 minutes, or up to 4 hours in the refrigerator.
  3. In a shallow dish, whisk together flour, paprika, cayenne pepper, garlic powder, onion powder, salt, and black pepper.
  4. Remove chicken from buttermilk, letting excess drip off. Dredge each cutlet in the flour mixture, ensuring it is fully coated.
  5. Heat 1 inch of vegetable oil in a large skillet over medium-high heat to 350°F (175°C).
  6. Carefully place coated chicken cutlets in the hot oil. Fry for 3-4 minutes per side, until golden brown and cooked through. Remove from skillet and drain on paper towels.
  7. While chicken is frying, lightly butter the cut sides of the brioche buns. Toast them in a dry skillet or under the broiler until golden.
  8. Spread mayonnaise on the bottom halves of the toasted buns.
  9. Place a fried chicken cutlet on top of the mayonnaise.
  10. Top with pickle slices.
  11. Place the top half of the bun over the pickles.
  12. Repeat for the remaining sandwiches.

Notes

  • For extra spice, add more cayenne pepper to the flour mixture.
  • Ensure the oil is at the correct temperature for crispy chicken.
