- 1.5 lbs boneless, skinless chicken thighs
- 2 tbsp olive oil
- 1 tbsp dried oregano
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup cooked quinoa
- 1 cup chopped cucumber
- 1 cup cherry tomatoes, halved
- 1/2 cup Kalamata olives, pitted and halved
- 1/4 cup crumbled feta cheese
- 1/4 cup chopped fresh parsley
- For the Tzatziki Sauce:
- 1 cup plain Greek yogurt
- 1/2 cup grated cucumber, squeezed dry
- 1 clove garlic, minced
- 1 tbsp fresh lemon juice
- 1 tbsp chopped fresh dill
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, toss the chicken thighs with olive oil, oregano, garlic powder, onion powder, salt, and pepper.
- Arrange the seasoned chicken on a baking sheet and bake for 20-25 minutes, or until cooked through and no longer pink in the center. Let it rest for 5 minutes, then slice or dice.
- While the chicken bakes, prepare the Tzatziki sauce. In a small bowl, combine Greek yogurt, grated cucumber, minced garlic, lemon juice, and dill. Season with salt and pepper to taste.
- Assemble the bowls: Divide the cooked quinoa among four bowls.
- Top each bowl with the cooked Greek chicken, chopped cucumber, cherry tomatoes, Kalamata olives, and crumbled feta cheese.
- Drizzle generously with Tzatziki sauce and sprinkle with fresh parsley.
Notes
- For a quicker meal, use pre-cooked rotisserie chicken.
- Add other Mediterranean vegetables like bell peppers or red onion.
