  • 1.5 lbs boneless, skinless chicken thighs
  • 2 tbsp olive oil
  • 1 tbsp dried oregano
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup cooked quinoa
  • 1 cup chopped cucumber
  • 1 cup cherry tomatoes, halved
  • 1/2 cup Kalamata olives, pitted and halved
  • 1/4 cup crumbled feta cheese
  • 1/4 cup chopped fresh parsley
  • For the Tzatziki Sauce:
  • 1 cup plain Greek yogurt
  • 1/2 cup grated cucumber, squeezed dry
  • 1 clove garlic, minced
  • 1 tbsp fresh lemon juice
  • 1 tbsp chopped fresh dill
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, toss the chicken thighs with olive oil, oregano, garlic powder, onion powder, salt, and pepper.
  3. Arrange the seasoned chicken on a baking sheet and bake for 20-25 minutes, or until cooked through and no longer pink in the center. Let it rest for 5 minutes, then slice or dice.
  4. While the chicken bakes, prepare the Tzatziki sauce. In a small bowl, combine Greek yogurt, grated cucumber, minced garlic, lemon juice, and dill. Season with salt and pepper to taste.
  5. Assemble the bowls: Divide the cooked quinoa among four bowls.
  6. Top each bowl with the cooked Greek chicken, chopped cucumber, cherry tomatoes, Kalamata olives, and crumbled feta cheese.
  7. Drizzle generously with Tzatziki sauce and sprinkle with fresh parsley.

  • For a quicker meal, use pre-cooked rotisserie chicken.
