- 1.5 lbs boneless, skinless chicken thighs
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp dried oregano
- 1 tsp garlic powder
- 0.5 tsp salt
- 0.5 tsp black pepper
- 4 cups chopped romaine lettuce
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 0.5 cup red onion, thinly sliced
- 0.5 cup Kalamata olives, pitted
- 0.5 cup crumbled feta cheese
- For the Tzatziki Sauce:
- 1 cup plain Greek yogurt
- 0.5 cup grated cucumber, squeezed dry
- 1 clove garlic, minced
- 1 tbsp fresh dill, chopped
- 1 tbsp lemon juice
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, toss chicken thighs with olive oil, lemon juice, oregano, garlic powder, salt, and pepper.
- Arrange chicken on a baking sheet and bake for 20-25 minutes, or until cooked through. Let rest for 5 minutes, then slice.
- While chicken bakes, prepare the Tzatziki sauce: Combine Greek yogurt, grated cucumber, minced garlic, dill, and lemon juice in a bowl. Season with salt and pepper.
- Assemble the bowls: Divide romaine lettuce among four bowls.
- Top with sliced chicken, cherry tomatoes, cucumber, red onion, Kalamata olives, and feta cheese.
- Drizzle generously with Tzatziki sauce.
Notes
- For a quicker meal, use pre-cooked rotisserie chicken.
- Add cooked quinoa or rice to the bowls for a heartier meal.
- Other vegetable additions include bell peppers or artichoke hearts.
