  • 1 tsp garlic powder
  • 0.5 tsp salt

  • 4 cups chopped romaine lettuce
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 0.5 cup red onion, thinly sliced
  • 0.5 cup Kalamata olives, pitted
  • 0.5 cup crumbled feta cheese
  • For the Tzatziki Sauce:
  • 1 cup plain Greek yogurt
  • 0.5 cup grated cucumber, squeezed dry
  • 1 clove garlic, minced
  • 1 tbsp fresh dill, chopped
  • 1 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, toss chicken thighs with olive oil, lemon juice, oregano, garlic powder, salt, and pepper.
  3. Arrange chicken on a baking sheet and bake for 20-25 minutes, or until cooked through. Let rest for 5 minutes, then slice.
  4. While chicken bakes, prepare the Tzatziki sauce: Combine Greek yogurt, grated cucumber, minced garlic, dill, and lemon juice in a bowl. Season with salt and pepper.
  5. Assemble the bowls: Divide romaine lettuce among four bowls.
  6. Top with sliced chicken, cherry tomatoes, cucumber, red onion, Kalamata olives, and feta cheese.
  7. Drizzle generously with Tzatziki sauce.
