  • 1 cup cooked quinoa
  • 1 cup chopped cucumber
  • 1 cup cherry tomatoes, halved
  • 1/2 cup Kalamata olives, pitted and halved
  • 1/4 cup crumbled feta cheese
  • 2 tbsp chopped fresh parsley
  • Tzatziki sauce for serving

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, toss chicken thighs with olive oil, lemon juice, oregano, thyme, garlic powder, salt, and pepper.
  3. Arrange chicken on a baking sheet and bake for 20-25 minutes, or until cooked through and juices run clear.
  4. Let the chicken rest for a few minutes, then slice or dice it.
  5. Assemble your bowls by dividing the cooked quinoa among them.
  6. Top the quinoa with the cooked chicken, chopped cucumber, cherry tomatoes, and Kalamata olives.
